(Pierluigi Basso Fossali, 2008) Umami is the taste of flavor, it joined the others (sweet, salty, sour and bitter) only in 1985. It is young and perhaps the most difficult to map, but it is also the one that adds depth to what we swallow and shakes a deep affective memory. An electronic diffused among the 17 instrumentalists on stage binds the acoustic sound traces and urges the journey on the time of savoring, an intimate and transitory act, strong and incontestable. A research that, in order to orient itself through what is unknown to the visible, appeals to the perceptive multiplicity within our senses and opens up to the narration of an inner journey of discovery. The culture of taste (as a practice of "feeling further") hides a subversive potential: it teaches us an ecology of valuations that resists the daily market of identities.
