甜椒橄榄派 Bell Pepper and Olive Pie

Ingredients: 2 bell peppers 1 onion ¾ cup tomato sauce (200 ml) 7 oz ground meat (200 g) Salt and pepper to taste Oregano to taste 2 hard-boiled eggs ¾ cup feta cheese (3.5 oz or 100 g) Sliced green olives (to taste) Chopped parsley (to taste) For the dough: 2 ½ cups all-purpose flour (300 g) ⅔ cup water (150 ml) 3 ½ tbsp extra virgin olive oil (50 ml) Salt to taste For brushing: 1 egg yolk 2 tbsp milk Directions: Filling Preparation: Cut the bell peppers and onion into small pieces. Sauté the onion in a pan with a bit of olive oil. Add the bell peppers and cook for a few minutes, then pour in the tomato sauce and let it cook. Add the ground meat, season with salt, pepper, and oregano. Cook until the meat is done, then set aside to cool. In a bowl, mix flour, water, extra virgin olive oil, and a pinch of salt. Knead until you get a smooth dough. Cover the dough and let it rest for one hour. Divide the dough into two parts. Roll out one half to create the base of the pie. Fill the base with the bell pepper and meat mixture. Add sliced hard-boiled eggs, crumbled feta, sliced green olives, and chopped parsley on top of the filling. Roll out the second half of the dough and place it over the filling, sealing the edges tightly. Brush the top with the egg yolk mixed with milk. Bake in a preheated oven at 365°F (185°C) for about 30 minutes, until golden and crispy on top.
