苹果酥皮 Tarte Tatin apple & puff pastry

Ingredients: - 130 g of sugar - 30 ml of water - 55 gr of butter - 3 apples - 1 piece of puff pastry - lemon juice (optional) Process: 1. Peel the apples and put them in lemon water. After that cut them into medium slices. 2. Melt the sugar, and when the edges start to caramelize, add the water* and swirl the pan until the sugar melts and mixes with the water. 3. After the sugar starts to caramelize, add the butter. Stir constantly until foamy, about 1-2 minutes. 4. Remove from the heat and wait 1 minute for the foam to subside, then add the apple slices all around. 5. Put the pan back on the heat and cook the apples for 7-10 minutes (juice should evaporate). 6. Remove from the heat and place the puff pastry, pricked with a fork, over the apples and press the edges to cover the apples well. 7. Baked in the preheated oven at 180C for 35 minutes. 8. Serve warm with some vanilla ice cream and season** with a little salt and pepper on top. Enjoy! TIPS: *water helps the sugar not get a bitter taste during the caramelization process. **salt tempers the sweetness of the sugar, and the apple goes well with the pepper, which gives it a more intense flavor.
